Confini is a blend of 6 varieties from Umbria as well as Tuscany, which were planned for experimental purposes (hardiness and flovour). Owing to the limited number of plants of each, the varieties were picked and pressed separately, and the oils blended later, thus producing a surprisingly flovour-rich blend with an additional aroma of ripe tomato leaves.
Because of its unique flavour, Confini is in addition to practically any recipe, to which it will bring a "different" flavour.
Chiarentana is the traditional Tuscan blend of 4 basic varieties of olives. However, unlike most Tuscan oils, each variety is picked and pressed separately, thus enhancing the freshness and the intensity of each aroma: blending of the pure oils only takes place later, leading to a powerful and flovour-rich oil.
Because of its variety of aromas, Chiarentana can be combined with all Tuscan recipes: bistecca alla Fiorentina, pappa al pomodoro, panzanella, cannellini beans, all pasta dishes, grilled and roast meat, pecorino with pears, any kind of salad.
OLIO DI FATTORIA
Olio di Fattoria is a blend of all the different oils from the olive trees growing in the Chiarentana groves, blended only after each variety has been picked and pressed separately. Because of this it is particularly rich in flavors and aromas, and very intense.
Because it contains so many different varieties, Olio di Fattoria can be used to enhance any dish or recipe, whether Tuscan or Umbrian. Its reasonable price also justifies the use of this oil for cooking purposes.
